What is makhana?

Euryale ferox · prickly water lily · fox nut · phool makhana

In still, fresh water: ponds and wetlands, mainly in Bihar. The plant is the prickly water lily, Euryale ferox.

The plant's spiny fruit holds many seeds. They sink to the pond bed, where they are gathered by hand.

Dried, roasted and popped, the hard seed becomes light, crisp, ivory makhana.

    Where it begins.

    Makhana grows in still, fresh water: ponds, wetlands and old river channels. Bihar is India's main makhana-growing region.

    Euryale ferox.

    The prickly water lily spreads huge, round, puckered leaves across the surface. It is the plant from which makhana comes.

    An aquatic plant of the water-lily family, and the only living species in its genus. Its stems and leaves carry sharp prickles, hence the name.

    In late spring, flowers push up through the leaves. Many never fully open and pollinate themselves.

    Seed

    Seeds sink.

    The spiny fruit holds many seeds. When it bursts, the seeds float for a short while, then sink to the pond bed.

    Harvest

    Gathered by hand.

    From late summer into winter, skilled collectors gather the seeds from the pond bed.

    Traditionally, collectors fix a bamboo pole in one place, then dive to the bottom and draw the seeds towards it. It is demanding, labour-intensive work.

    Cleaning

    Washed clean.

    The seeds are washed in water to remove mud and debris.

    Traditionally the seeds are swung repeatedly in water in a crescent-shaped bamboo container, then cleaned again with clear water and picked over by hand.

    Drying & grading

    Dried, then sorted.

    The clean seeds are dried in the sun, then sorted by size through sieves.

    In the traditional method, the sun-dried raw seeds are passed through sieves of different sizes, largest first, before they are roasted.

    Roasting & popping

    Patience, then the pop.

    The seeds are roasted, rested for two to three days and roasted again, then struck while hot so the shell breaks and the kernel pops.

    This is the traditional method: the hot seed is struck with a wooden mallet and the hard coat breaks as the kernel expands. Mechanised systems that roast and pop by machine also exist. We will say which method PHOOLZA's suppliers use once it is documented.

    The popped kernel is light and crisp, with small brown flecks left by the seed coat.

    Grade matters.

    Makhana is traded by size grade. In Bihar's makhana trade, these grades are called suta. PHOOLZA's current supplier range spans 4, 5 and 6 Suta.
